It often happens, over a chat with our local suppliers, that we share ideas, recipes, and future plans.
No one knows better than the farmer when the time is right to harvest their chard for the kitchen.
From these honest conversations, our daily specials are born — crafted in limited quantities, but with limitless quality.
Fresh raw salmon served over a vibrant bowl of mixed green salad with mango, pineapple, seasonal fruit, Pula cherry tomatoes, soy sauce, sesame seeds, and fresh red onion.

Ghisadu is a traditional Sardinian stew made from tender, slow-cooked beef.
Our version features rich tomato sauce, sautéed eggplant, and top-quality meat, served over artisanal fregula — Sardinia’s signature toasted pasta.
Finished with a side of fresh fennel carpaccio.
Allergens: contains gluten (only if served with fregula – also available with whole grain red rice from Oristano upon request)
Our homemade chickpea hummus, blended with natural gioddu (traditional Sardinian yogurt) and lemon, pairs perfectly with tender strips of free-range chicken slow-cooked to perfection.
Topped with Dolianova olives, teriyaki glaze, seasonal vegetables, and walnuts — all served on crisp traditional pane pistoccu.

Beef Tartare from 100% Italian Certified Farms
Hand-cut and simply seasoned with extra virgin olive oil, black pepper, and fresh red onion.
Served with fennel carpaccio and fresh goat cheese mousse, on traditional pane pistoccu.

Guttiau Chips with Fresh Guacamole & Raw Salmon
Crispy pane guttiau chips served with homemade guacamole made from fresh avocado, tomato, onion, and cucumber. Topped with raw salmon, seasonal fruit, and a mildly spicy mayo.
Tip: Perfect to share as a starter.

Light Vegetarian Board
A fresh selection of daily vegetables, one cheese, a tasting of our veggie patties, and guttiau chips served with our homemade guacamole.
